Rediscovering Hyderabad’s Hidden Culinary Treasures: Tootak and More

Hyderabad, often touted as a tourist destination, hides beneath its glittering surface a deep-rooted traditional culture and cuisine heavily influenced by Mughlai Turkic and Arabic flavors.

Beyond the glitz and glamour, Hyderabad’s cuisine, with its myriad traditions and artistic practices, is truly a culinary gem. While the world may know it for its famous Hyderabadi Kacche Gosht Ki Biryani and Patthar Ka Ghost, the city’s food heritage is a treasure trove to be explored.

Hyderabadi Cuisine: A Rich Tapestry of Flavors

Hyderabadi cuisine is renowned for its exquisite dishes crafted from rice, wheat, meat, and many spices. It’s an art form finely honed over centuries. While first-time visitors may indulge in the world-famous Biryani and Irani Chai, there’s much more to savour beyond these favorites.

Reviving Lost Flavors: The Story of Prateek Mathur

One of Hyderabad’s unsung culinary heroes, Prateek Mathur, embarked on a mission to resurrect forgotten recipes and traditions. These culinary treasures, once hidden in the annals of history, now find their way to the modern palate thanks to Prateek’s dedication. His journey began with the rediscovery of “Tootak,” a dish lost to time but still cherished by his family.

Tootak: A Culinary Marvel from Hyderabad’s Past

Tootak, derived from the phrase “Tu Takta Reh Jayega,” meaning “to be left astounded,” is a delicacy that once graced the royal kitchens of Hyderabad. This appetizer-cum-dessert boasts a hard outer shell made of semolina and ghee, while its interior is a delectable blend of mince and dry fruits infused with saffron and milk.

More Culinary Delights to Savor

Prateek Mathur’s culinary journey continues after Tootaks. His menu showcases various flavors, from the soft and exquisite Kashmiri Louz to the aromatic Patthar Ka Ghost, cooked to perfection on a slab. You’ll also find succulent Sheekh Kebabs, the creamy indulgence of Malai Chicken, and the tempting Angrezi Cutlet, among other delights.
