Irshad Khan spends long hours in the freezing waters of Anchar Lake, collecting lotus stems to support his family. Every morning, he gets into a small boat, balancing himself while reaching deep into the water to pluck the stems. After gathering them, he cleans and bundles the lotus stems to sell in the market. This early morning task is challenging, especially in the cold weather, but it is essential for his livelihood.
The Importance of Lotus Stems
Lotus stems, known as “Nadru” in Kashmir, are a popular vegetable enjoyed by many. They are used in various dishes, especially during parties and special occasions in Kashmiri households. The lotus root is a creamy white, underwater vegetable with a porous structure, resembling a long stick that can grow over four feet long. While lotus is grown in many parts of the world, the variety found in Kashmir is considered the most delicious and juicy. It thrives in shallow waters of lakes and ponds, such as Dal Lake, Wular Lake, Mansar Lake, and Anchar Lake.
A Lifelong Struggle
Irshad has been in this business for over 15 years. He could not continue his education beyond the 10th grade due to family issues and poverty. Despite these challenges, he has found a way to earn a living. Selling lotus stems is his only source of income, and he takes pride in it. Although lotus stems are considered an expensive delicacy, they are loved by the people of Kashmir and are in high demand.
Nutritionally, lotus stems are beneficial as they contain important elements like potassium, phosphorus, copper, iron, manganese, thiamine, pantothenic acid, zinc, vitamin B6, vitamin C, and fiber. Irshad believes that selling lotus stems not only provides for his family but also offers a nutritious food option for the community. His dedication to this work reflects the hard life many face in the region, yet it also highlights the cultural significance of lotus stems in Kashmiri cuisine.
